This sake is brewed using "Sankeinishiki," the latest sake rice variety developed exclusively in Nagano Prefecture. Gathering the essence of the Shinshu terroir, this rice endows the sake with an unparalleled silky smoothness and an extremely clean finish.
Unlike many rich, sweet Junmai Daiginjos, we chose a unique artisan path. Through the use of special yeast and low-temperature fermentation, we have successfully created a distinct flavor profile:
