"Kinmon Nishiki" is a superior crossbreed of Nagano's Takane Nishiki and Hyogo's Yamada Nishiki, created in 1964. However, due to its extreme difficulty in cultivation, it once vanished from history. In recent years, thanks to agricultural breakthroughs and the persistence of breweries, this rare variety—hailed as the "Phantom Sake Rice" of Shinshu—has been successfully revived, becoming a gem that showcases profound flavor layers.
Kinmon Nishiki is characterized by its incredibly fast water absorption rate. To precisely control the fermentation curve, our brewers must monitor the "soaking" process strictly by the second. Only through such delicate craftsmanship can the purest potential of Kinmon Nishiki be fully unleashed.
